Matcha Financiers

Ingredients:

  • 1/2 cup unsalted butter

  • 1/2 cup almond flour

  • 1/2 cup powdered sugar

  • 1/4 cup all-purpose flour

  • 2 tablespoons matcha powder

  • 4 large egg whites

  • Pinch of salt

  • Optional: sliced almonds for garnish




Instructions:

  1. Preheat your oven to 375°F (190°C) and grease or line a financier mold or mini muffin tin with butter or cooking spray.

  2. In a small saucepan, melt the butter over medium heat, swirling occasionally until it turns golden brown and emits a nutty aroma. Remove from heat and let it cool slightly.

  3. In a mixing bowl, combine almond flour, powdered sugar, all-purpose flour, matcha powder, and a pinch of salt.

  4. In a separate bowl, lightly whisk the egg whites until foamy.

  5. Gradually add the egg whites to the dry ingredients, mixing until just combined.

  6. Slowly pour in the melted butter, stirring continuously until the batter is smooth.

  7. Pour the batter into the prepared mold, filling each cavity about 3/4 full. If desired, sprinkle sliced almonds on top of each financier.

  8. Bake in the preheated oven for 12-15 minutes, or until the financiers are golden around the edges and a toothpick inserted into the center comes out clean.

  9. Remove from the oven and let the financiers cool in the mold for a few minutes before transferring them to a wire rack to cool completely.
